Low Carb Parmesan Chicken with Pork Rind Crumbs

This recipe is super simple and delicious. Perfect for those on a low-carb/keto lifestyle. This version is baked in the air-fryer, making it so much lighter than the fried version. Parmesan Chicken with Pork Rind Crumbs will definitely be a part of your weekly dinner menu.
  • 1 pack of split boneless chicken breast (3/4- 1 inch thick) 
  • 2 eggs (beaten)
  • What's Crackalackin Pork Rind Crumbs 
  • Italian seasoning 
  • salt and pepper to taste 
  • garlic powder
  • parmesan cheese 
  • low carb marinara sauce
  • sliced mozzarella cheese

Preparation & Assemble:

  • season both sides of the chicken breast with the Italian seasoning, S & P, garlic powder, and parmesan cheese sparingly (marinate in the fridge for at least 1 hour prior to cooking) 
  • preheat your air-fryer to 400F degrees
  • dip one chicken breast into the beaten eggs, draining the excess off to the side of the bowl
  • coat both sides of chicken breast in the pork rind crumbs, pressing firmly into it
  • repeat the steps until all the chicken breast are coated
 Let's Get Cooking:
  •  place the chicken breast on the cooking tray and bake for 5 minutes each side (halfway into cooking, flip the chicken and spread 1-2 tbsps of marinara sauce and 1 slice mozzarella cheese)
  • make sure not  to overcrowd the tray in order for it to get crispy; repeat the steps if the entire package does not fit into the tray at one time
