Cracklin Cornbread Muffins

Here in the south, we love cornbread. You can find it at many different barbeque joints around town. I decided to add some yummy cracklin crumbs to a store bought cornbread mix. If you are a busy parent like me, chances are you don't have the time to bake from scratch. So my go to blue box brand of cornbread mix works just fine for us. Sometimes you can find cracklin crumbs at specialty meat markets, especially in Louisiana. If you can't find it, try some chopped crisped bacon. 

Follow the instructions on the box to prepare and then add about 1 tsp of cracklin crumbs per muffin. This box allowed me to bake 9 muffins so that's approximately 3.5 tbsp(s) of cracklins. Bake as instructed and enjoy! 

I smothered melted butter and honey over my muffins while it was still hot out the oven. I may add some chopped jalapeno to it next time for a nice kick! This was a hit in my house, and I am sure it will be at yours as well! Happy eating!
